On 29 & 30 May, a brand new course is opening its doors to you... and it's not for everyone.
A programme designed for seasoned pastry chefs
This course, simply called ‘Exclusivité Glaces’, has been designed for those who have already mastered the basics of pastry-making and who have their own equipment at home, in particular an ice-cream maker.
You'll be taken through the technological fundamentals that make all the difference between a successful home-made ice cream... and a creation worthy of the greatest ice cream houses.
Tradition and innovation in the service of taste
Over the course of two days, you'll explore the essential ingredients of ice cream, learn how to handle innovative components such as inulin and threose, and discover how they influence texture, preservation and mouthfeel.
All without ever losing sight of what's essential: pleasure, indulgence and creativity.
A range of creations to try out :
This course will guide you step by step through a range of ice creams:
- milk ice cream
- fruity sorbets
- creamy ice creams
- light and airy mousses...
And because ice cream can also be enjoyed with the eyes, you'll learn how to present it with care: in pots, fingers, sticks, frozen desserts or even cones.
An immersive, user-friendly format
Throughout these two days (from 9am to 4.30pm), you will be accompanied by an ice cream professional who will share techniques, advice and production secrets with you. Lunches will be taken together, in a friendly atmosphere, between enthusiasts.
At the end of the course, all the creations will be shared between the participants. So don't forget to bring a cool box with ice cream to take home your creations and share them with your friends and family!
